Chocolate Zucchini Bread with Coconut

This chocolate zucchini bread recipe is one of those breads that tastes more like a loaf of bread, but you can get the food for breakfast. Two kinds of chocolate and coconut make this rich and sweet recipe. I love the black chips for chocolate zucchini bread, but most kids (including me) will probably prefer semi-sweet or milk chocolate chips.

Yield: 12 slices of zucchini bread

Ingredients:

  • 1 cup of flour
  • 1/2 cup unsweetened cocoa powder
  • 1c. Baking soda
  • 1/4 c. Baking soda
  • 1/4 c. kosher salt
  • 8c. melted butter
  • 3/4 cup + 2 tbsp. Sugar
  • 2 large eggs
  • 1-1/2 cups shredded zucchini
  • Chocolate chips 3/4 cup
  • 1/2 cup shredded sweetened coconut

Preparation:

  1. Preheat oven to 375 degrees F. Grease a loaf pan (compare prices)

  2. In a bowl, combine the flour, cocoa powder, baking soda, baking powder and salt. Set aside.

  3. In a large bowl butter, sugar and eggs until smooth. Stir in zucchini. Add dry ingredients and mix well. Add the chocolate chips and coconut.

  4. Spread the chocolate zucchini bread batter into the prepared loaf pan. Cook the zucchini bread for 50-60 minutes, until a knife inserted in the center comes out clean. Return to cool completely the chocolate zucchini bread on a rack
