This chocolate zucchini bread recipe is one of those breads that tastes more like a loaf of bread, but you can get the food for breakfast. Two kinds of chocolate and coconut make this rich and sweet recipe. I love the black chips for chocolate zucchini bread, but most kids (including me) will probably prefer semi-sweet or milk chocolate chips.

Ingredients:
- 1 cup of flour
- 1/2 cup unsweetened cocoa powder
- 1c. Baking soda
- 1/4 c. Baking soda
- 1/4 c. kosher salt
- 8c. melted butter
- 3/4 cup + 2 tbsp. Sugar
- 2 large eggs
- 1-1/2 cups shredded zucchini
- Chocolate chips 3/4 cup
- 1/2 cup shredded sweetened coconut
Preparation:
- Preheat oven to 375 degrees F. Grease a loaf pan (compare prices)
- In a bowl, combine the flour, cocoa powder, baking soda, baking powder and salt. Set aside.
- In a large bowl butter, sugar and eggs until smooth. Stir in zucchini. Add dry ingredients and mix well. Add the chocolate chips and coconut.
- Spread the chocolate zucchini bread batter into the prepared loaf pan. Cook the zucchini bread for 50-60 minutes, until a knife inserted in the center comes out clean. Return to cool completely the chocolate zucchini bread on a rack
