Grasshopper Pie Recipe

Grasshopper Pie is a retro dessert that many adults remember from their childhood. Traditionally made cake recipes mint grasshopper with marshmallows and mint cream in a chocolate cookie crust. This grasshopper pie recipe has all the flavors, but instead of mint cream, this recipe with peppermint extract. Feel free to use the mint cream. Simply substitute 1/4 cup cream mint for peppermint extract and green food coloring.

Yield: 8 servings

Ingredients:

  • 24 chocolate sandwich cookies divided,
  • 3 c. melted butter
  • 3 cups miniature marshmallows
  • 1/2 cup milk
  • 1/8 c. Peppermint extract
  • 4-5 drops of green food coloring
  • Frozen whipped cream thawed 1 cup

Preparation:

  1. 16 Place chocolate snacks in a food processor with a metal blade. Pulse until crumbs form.

  2. Pour the crumbs into a hill in the middle of a circular plate of 9 inches. Drizzle the melted butter mix and mix well over the crumbs with a fork. Use your fingers, the bottom of a glass or the bottom of a flat measuring cup to help the crumbs in a circular plate to form a crust. Freeze the crust for 10 minutes.
