If your children like me, they love tacos. But I did not always have time to create a taco bar. This recipe taco dish is my solution. We get all the great flavors of tacos on a comfortable pot. This dish has a great recipe for potlucks, too.

Total time: 50 minutes
Yield: 6-8 servings
Ingredients:
- 1 pounds ground beef
- 2 cups tomato sauce
- 1 cup canned black beans, rinsed and drained (vegetarian black beans are great with this recipe)
- 1 cup sour cream (low fat is fine)
- 1 cup ricotta cheese (low fat is fine)
- 2 cups shredded Mexican cheese blend (or 1 cup grated cheddar cheese 1 cup shredded Monterey Jack)
- 2 cups corn chips
Preparation:
- Preheat oven to 350 degrees F. Spray a 9 x 13 dish with cooking spray.
- Heat a large skillet over medium heat. Add ground beef. On all sides.
- Add the salsa and black beans. Cook 1-2 minutes to allow the flavors to come together. Remove from heat.
- In a small bowl sour cream, cottage cheese and 1 cup shredded Mexican cheese.
- Sprinkle half of the tortilla chips in the bottom of prepared pan.
- Covering the half of the meat mixture, the whole mixture of curd.
- Parts remaining tortilla chips on top. Sprinkle with the remaining meat mixture and remaining grated cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake for 5-10 minutes until the cheese is melted.
