Taco Casserole Recipe

If your children like me, they love tacos. But I did not always have time to create a taco bar. This recipe taco dish is my solution. We get all the great flavors of tacos on a comfortable pot. This dish has a great recipe for potlucks, too.

Preparation time: 15 minutes

Cooking time: 35 minutes

Total time: 50 minutes

Yield: 6-8 servings

Ingredients:

  • 1 pounds ground beef
  • 2 cups tomato sauce
  • 1 cup canned black beans, rinsed and drained (vegetarian black beans are great with this recipe)
  • 1 cup sour cream (low fat is fine)
  • 1 cup ricotta cheese (low fat is fine)
  • 2 cups shredded Mexican cheese blend (or 1 cup grated cheddar cheese 1 cup shredded Monterey Jack)
  • 2 cups corn chips

Preparation:

  1. Preheat oven to 350 degrees F. Spray a 9 x 13 dish with cooking spray.

  2. Heat a large skillet over medium heat. Add ground beef. On all sides.

  3. Add the salsa and black beans. Cook 1-2 minutes to allow the flavors to come together. Remove from heat.

  4. In a small bowl sour cream, cottage cheese and 1 cup shredded Mexican cheese.

  5. Sprinkle half of the tortilla chips in the bottom of prepared pan.

  6. Covering the half of the meat mixture, the whole mixture of curd.

  7. Parts remaining tortilla chips on top. Sprinkle with the remaining meat mixture and remaining grated cheese.

  8. Cover with foil and bake for 15 minutes. Remove foil and bake for 5-10 minutes until the cheese is melted.
