Zucchini Bread Recipe

This zucchini bread recipe (click to enlarge) is perfect for use up to the bumper crop of zucchini. The warm scent of pumpkin pie spice and weight makes this divine zucchini bread smell when cooking. Pinch of lemon zest gives this recipe shine and extra zip!

Preparation time: 20 minutes

Cooking time: 50 minutes

Total time: 1 hour 10 minutes

Yield: 12 servings

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1/2 c. Baking soda
  • 1/2 c. Baking soda
  • 1/2 c. kosher salt
  • 2 c. Pumpkin pie spice
  • 1/2 c. Ground mace
  • 2 large eggs
  • Vegetable oil 1/2 cup
  • 1 cup of sugar
  • 1c. Vanilla
  • Peel of one lemon
  • 1-1/2 cups shredded zucchini

Preparation:

  1. Preheat oven to 325 degrees F. Spray a loaf pan with cooking.

  2. In a medium bowl, sift together the first 6 ingredients (by weight).

  3. In a large bowl, beat eggs, oil, sugar, vanilla and lemon zest. Stir in zucchini.

  4. Add the flour mixture to zucchini mixture. Pour filling into prepared pan.

  5. Bake 40-55 minutes or until knife inserted in the center comes out clean.
